Why does this catalog jump from 5 by 7 to 8 by 10?

Because that is what these ten listings offer. There is no 6 by 9 and no 9 by 12 here. A common rule of thumb puts the front legs of a seating group on the rug, and in a room between about 12 and 14 ft across neither 5 by 7 nor 8 by 10 lands neatly on that. The gap is real and we would rather say so than pretend a 5 by 7 stretches.

What does non-slip mean on these listings?

It means the seller has written non-slip. It is not a measured figure and it does not refer to a published standard. On a hard floor, the thing that stops a rug moving and keeps its edges flat is a rug pad, which is a separate purchase and is not included with anything here.
